But the beauty of it all was that this perfection – and it was perfect – was so simple. Thai cuisine is more delicate than Indian and more earthy than influences further east. But then again, you could say that about most things Thai. The kingdom blossomed between the great civilisations of India and Sumatra, nestling under the belly of China. It seems to have taken the best of all their cultures, distilling their qualities into a delicate blend that is very Thai and altogether unforgettable.
